With very limited kinds of products, we think,
imagine, and create our own Kyoto way of
cooking - this is what we have been doing
since the ancient times and is one traditional
character of Japanese culture. |

"Food makes a human" Japanese food culture has a great influence to form Japanese national characters. We do not prefer strong, distinctive taste, or dramatic changes in taste in Japanese dishes. Our sense of taste and value can be said rather simplified, but Kyoto is different. They say that they have wide variety of taste, enjoy changes, and prefer to try completely new taste. Kyoto likes to take new things, but respect and remain old things at the same time. Such a sense of value probably comes from Kyoto cuisine they are raised with, and this is the traditional spirit of Kyoto culture. Japanese dishes are usually cooked with lots of Shoyu (soy bean sauce) and Miso (soy bean card). In Kyoto, we try to add a minimum flavor and seasoning to enhance the natural taste and color of products. With this Kyoto traditional way of cooking, you can enjoy variety of natural taste and seasonal changes in taste of products. Please come and try Kyoto cuisine. |
