| "Chisou" means "running around"
literally. It is used to express good things to eat, but, originally, it is the words for a spirit of cook. |

The origin of the words is "Idaten", the guardian deity of Buddha, who is said to run miles for a moment. The story is like this; One day, the fast running devil stole the ashes of Buddha and run away like a whirlwind. "Idaten" chased and caught him an instant. Zen-dera in Kyoto is dedicated to the wing of the Buddha or the grave guard "Idaten", and which shows the spirit to treat your guests with nice, fresh products of mountains and seas gained by running all over the country like "Idaten". As this, "Chisou" is the spirit of treatment and hospitality, and dishes prepared with such a spirit is called "Gochisou". "Gochisou" made by making "Idaten" run is the heart of treatment of Kyoto people, and is, indeed, the most important mental attitude for Kyoto cuisine. |
